Blueberry Banana Power Oatmeal
Oatmeal is a breakfast staple for most households and the great thing about oatmeal is that it is a blank canvas. You can load it with lots of nutricious add ins to make it a healthy, hearty and delicious meal that your whole family will enjoy. Since breakfast is the most important meal of the day I like to take the opportunity to load oatmeal up with as many“super foods” as I can so I can feel good knowing my daughter is starting her day with a healthy meal. This particular flavor combination is the perfect blend of creaminess with a hint of natural sweetness . I always like to add chia seeds into as many meals as I can because they offer added protein, which is a plus if you have a picky eater or a child who doesn’t get enough protein in their diet like my little one. This is a quick simple breakfast that you can have on the table in no time, which is always a plus for rushed mornings and busy mamas!
½ c old fashioned oats
1 c of milk (I use whole milk, but any milk will do)
½ of a banana
1 tsp of coconut oil
1 tsp of chia seeds
1 tsp of cinnamon
- Mix oats and milk in a medium saucepan, bring to a boil and then let simmer until milk is fully absorbed and oatmeal is cooked.
- Once oatmeal is cooked, transfer to bowl. First add coconut oil and mix ( I like to add the coconut oil first because it melts quick since the oatmeal is still hot and makes for a creamier oatmeal)
- Then add the rest of the add ins and mix together and that’s it!
I find that with having a toddler, finding ways to “remix” staple foods is a must. If you can find ways to make the foods that they already enjoy healthy it takes a little bit of the stress out of mealtime. Sometimes like in the case of this oatmeal, it is just finding the right flavor combination that makes the meal go from blah to delicious.
